<br />
i love the deep-fried/toasted ravioli that is found at italian restaurants and decided that i might as well try my hand at making some. for inspiration, i used <a href="http://nu-spoon.com/" target="_blank">spoon aka nu-spoon</a>'s recipe for <a href="http://nu-spoon.com/2012/04/14/breaded-ravioli/" target="_blank">breaded ravioli</a>. however, unlike the recipe, i din't use eggs and instead used chef boyardee's cheese ravioli with meat sauce.<br />

first i got the bread.<br />
<br />
it was time to make bread crumbs. so after arguing and somehow managing to persuade my mom that it was just a slice of bread and that it was "pretty old anyways" [we keep our bread in the fridge to prevent/slow-down-the-process-of mold], i pulled out the toaster and, after tearing the slice in half [because it wouldn't fit in the toaster], toasted the bread. it was starting to brown a bit too much for me [bordering on becoming black], so i took it out and started to use my fingers to crumble it. unfortunately, it was not hard enough. this resulted in some soft crumbs that, when compared to the store-bought crumbs, seemed like chunks. so i plunked it into the toaster oven [which my mom had told me to use instead of the toaster, but which i refused to because i wanted to do things my way] and toasted it for about 10 minutes [i mean less electricity with the toaster...right?]. i then proceeded to crumble it [not all of it was perfect for crumbling].

after i saw that the one slice of sort-of-crumbled bread crumbs was not that much, i caved in and got out the store-bought bread crumbs [something my mom had told me to use in the beginning] and added it to my bowl of bread crumbs. i also added some oregano and parsley for flavor and some crushed red pepper flakes for spice. and then i mixed it all up.

i opened up the ravioli and then started to bread them.

to bread them, i picked out a ravioli and using the side of a fork, scraped the meat sauce off it. then i used the fork to transfer the ravioli into my bowl of breadcrumbs. i used my fingers to pat breadcrumbs on both sides and placed the breaded ravioli on the greased rack that belongs to the toaster oven.

after the ravioli was all breaded, i sprinkled some cheese on some of the ravioli as a topping. then the rack was popped into the oven to bake at 425 °F for 15 minutes.

i would have used a FOOD PROCESSOR or SOMETHING ELSE rather than my poor fingers.<br />
<br />
the rough texture of the toasted bread tore beluga, my nickname for my right thumb. my skin was scratched up and slightly peeling when i was done. true, there was no blood, but it hurt a lot!
<br />
<br />
also next time, i'm slicing the bread in half sideways and then cutting the halves into smaller pieces before toasting them. then i'm going to use the magic bullet and see if that will work to make "real" breadcrumbs.
<br />
<br />
i'm also going to use the toaster oven first because i find that it doesn't make bread so "burned" when used. also, i might try another type of bread. my mom commented that there was this slight bitter taste which i think was from the slice of bread that i used [i mean there was a multitude of grains in that slice].

i still don't know whether it was better to use sauce rather than egg to bind the crumbs to the ravioli though...

nevertheless, i personally liked them. my mom said that the piece she tasted was good, but she's my mom so she has to say things like that from time to time... though that's never stopped her before...

i think the next time i would like to puree the berries first and then add that to the water first; the water and the berries would equal ⅜th of a cup in total. personally i love eating these by themselves, but they are great with syrup and other toppings. i would like to apologize since i'm still not that good at pancakes... i've not only read countless tips, but have even had my mom teach me... but hopefully these will look a bit better if someone else makes them. i would also mix the batter better. towards the bottom of the cup, the batter did not get mixed well and as a result the final pancakes look marble-y.

i really don't know where i got the idea from originally. i just remember wanting to make some sort of pop tart or rectangular calzone. one of the inspirations for this recipe is the <a href="http://kirbiecravings.com/2012/07/pepperoni-pop-tarts.html" target="_blank">pepperoni pop tart</a> from <a href="http://kirbiecravings.com/" target="_blank">kirbie's cravings</a>.

the first thing i did was to gather all the ingredients, especially the dough. i used the same dough i made yesterday; i had just stored the remaining dough in a ziploc bag and refrigerated it.<br />
<br />
{TIP : it's alright to start right away without having to wait for the dough to warm up... by the time the "tart" is ready to be baked, it will have warmed up.}

next it was time to roll out the dough. i was going to make 3 different types of tarts so i took out the dough from the ziploc bag and tore a small piece off before rolling it out thinly.

then it was time to cut the dough into a rectangular format. i used a knife to mark and cut the dough.

{TIP : a serrated butter knife works great to mark the dough, just press the edge against the dough. it also makes it easier to cut.}

i then scrunched up the extra dough and rolled it out again thinly before cutting out a similar sized rectangle from the rolled dough.

after buttering the rectangles, i then added the sauce; first came the tomato sauce, then the spices.

then came the toppings~ i decided to use one mushroom for all three tarts. so i cut part of the mushroom and, after sprinkling some shredded cheese on top of the sauce, i placed the mushroom pieces on top. i tore a third of the sliced cheese and placed it on top of the mushrooms. then i added a slice of turkey and topped that off with shredded cheese.

it was time to finish up the tart. so i draped the other rectangular piece of dough, butter side down, on top of the rest of the tart. i then sealed the tart by pinching and smushing the dough together. since i had assembled the tart on the cutting board, i had to peel it off the board slowly to make sure that the dough didn't tear. i put it on a foiled and greased baking rack.

time for the next one~ i started with two pieces of dough this time. i wanted to try a thicker tart... i usually roll the tart dough extremely thin. so i rolled them out and cut them out. i wanted to try to make some holes on the top for this tart. so on one of the rectangles, i used the tip of the knife and sliced some small slits. afterwards, i greased them with butter. [i decided to assemble the tart on the rack to begin with so that i wouldn't have to peel them off the board.]

then it was time for sauce and toppings.

after i added the toppings, i then draped the rectangular dough with the slits, butter side down, on top of them and pinched and smushed the edges together to seal the tart.

now for the top of the tart. for this tart, i cut out strips from the scraps of dough and laid them on top of the tart in a crisscross manner. i pinched the scraps against the bottom of the tart to attach them together.

i baked the tarts in the toaster oven at 425° F for 15 minutes. and when they were done, took them out.

i would have buttered the dough and spread the sauce on a flat surface and then placed it on the rack before adding the toppings. even better yet, i would have done it on a tray instead of a rack. also, i might want to try to place it on the bottom slot of the toaster oven next time... maybe that way it wouldn't be so moist on the bottom of some of the tarts.

my mom and me have a cat [mika] and a dog [shelby]. today shelby had an upset stomach so i kinda made her stay in her pen so that she could get some rest.
<br />
<br />
as a result, mika was lonely and just wanted to play... when i went to water the grass, there was mika at the glass door meowing that she either wanted to go outside or for me to come back in. {this is actually amazing since when we first got mika, she was terrified of being outside, even when we were holding her really tight and comforting her.}
<br />
<br />
so i turned on the tap and opened the sliding door. and that's when she made her escape. usually she moves back when i come inside, but today she jumped over my foot and set off walking like she owned the backyard.
<br />
<br />
needless to say, her little escapade was cut short when i picked her up a couple of steps later, but despite her little protesting meows, i think she was pretty proud that she had gotten to spend some time outside.

store to buy the frozen sort. so i looked up how to make pizza dough...

after it was mostly mixed and sort of in clumps, i emptied the bowl onto the counter so that the "dough" could be kneaded.

i then smushed all the fragments of dough together.

it was time to knead the dough.<br />
first things first... a layer of flour on the counter top to prevent the dough from sticking to the surface.

then i kneaded the dough [i did take pictures of me kneading the dough, but i'm too shy to post them here...]. in the past when i have made this, i usually spent a long time on the kneading because the dough was hard. for some reason, today's batch was really easy. i think there was more water than usual.<br />
<br />
{TIP : if the dough is sticky add a pinch or two of flour to coat the dough being kneaded. if the dough is too hard or dry and crumbling, add ½ to 1 teaspoon water. add more flour or water as needed. the dough should feel smooth but not sticky.}<br />
<br />
{TIP : if the dough feels too hard to knead, break it in half and knead one half at a time.}

the dough was done and now i could work on the actual pizza. i cleaned up the dishes and put away the ingredients.

i tore off a small piece of the dough and then rolled it out.

i then spread some butter across the top of the rolled dough.

{TIP : spreading butter or oil across the surface of the dough will prevent the tomato sauce from soaking into the dough.}

next, came the sauce.<br />
<br />
i spooned out some sauce into the center of the greased pizza base (the rolled dough) and then added the leafy spices and the spicy spices. i used the bottom of a spoon to mix the ingredients into the sauce. then i spread the sauce out, making sure to leave the edge empty.
<br />
<br />
i noticed that there wasn't enough sauce to cover the pizza base, so i spooned out some more tomato sauce and mixed it in with the sauce on the dough.

and then toppings ♥... i chopped only one mushroom to use for both pizzas. i sprinkled some cheese onto the pizza sauce and then placed the mushrooms; some more cheese was sprinkled on top of the mushrooms to cover any empty spots.

then i added the smaller layer of pizza dough onto the cheese layer. this way the pizza base will be filled with cheese.

now comes the stuffed crust.

it is visibly clear that one layer is smaller than the other. the bottommost layer is peaking out. i lined this bottom edge with cheese. then i folded and rolled it into a crust. this way the crust is filled with cheese.

i sprinkled some shredded cheese on the sauce. then i placed the mushrooms. i tore up a slice of packaged cheese and placed the pieces on top of the mushrooms. after that i sprinkled more shredded cheese on top of the cheese pieces. on top of all the cheese i sprinkled some parsley flakes.

i decided to use the toaster oven.

i got a rack and wrapped it with foil. then i sprayed it with a non-stick cooking spray.

i placed both pizzas onto the rack.

{TIP : if you are like me and decide to make the pizza on the counter top, be warned. make sure the surface is dusted with flour BEFORE you start adding the sauce and topping. otherwise, the dough will stick to the counter top. if you forget, just slowly "peel" the pizza off the counter top; this will stretch it out a bit and rearrange your toppings, but it is do-able. if you use a tray instead of a rack, try making the pizza on the tray itself.}

the original <a href="http://www.cooks.com/rec/view/0,2341,157183-233201,00.html" target="_blank">recipe</a> calls for the pizza to be baked at 400° F for 15-20 minutes.<br />

instead, i baked them for 15 minutes at 425° / 440° F.

{TIP : mushrooms take at least 15 minutes at this setting to cook... otherwise, they would be raw...}

i would have placed the pizzas differently; the basic pizza should have gone on the right, and the cheese pizza should have gone on the left). the basic pizza's crust got slightly harder than i had expected and was crunchy, but still tasted good. also, i ate the basic pizza first and the cheese pizza had cooled down. so if you make the cheese pizza eat it as soon as it comes out of the oven to experience the melty cheese.
